My World Famous (According to Nath) Laksa

I wanted to share one of my all time favourite recipes with anyone that actualy reads what im putting down here.

I make this every week, usually on Sunday or Monday night, its the easiest, tasiest, most cleansing and comforting soup ever! My partner, Nathan, loves it so much it seems to be the only time he updates his Facebook Status...........usually saying how full he is, or how he's looking forward to eating.



















My Lucious Laksa

2 Chicken Breasts - cut into large chunks
5-7 Shallots or spring onions - sliced into small pieces
2 Handfuls of Mushrooms - Quartered or sliced in small pieces
(Enoki mushrooms are best but we've been using button mushrooms lately to keep to a budget)
2 Kaffir Lime Leaves
3 small sliced chunks of ginger
1 Litre Chicken Stock
1 small tin of LITE coconut milk
2-3 desert spoons of Red Curry Paste
1/2 teaspoon of good quality Shrimp Paste.
A good slosh of peanut oil
Thick Rice Noodles


Method

Heat large soup saucepan, put in Oil, Curry Paste and Shrimp Paste.
Stir vigourously untill fragrant.
Add Ginger, Kaffir Lime Leaves, White stems of the Shallots and Chicken Stock.
Stir untill well combined then add LITE Coconut Milk.
Bring to the Boil, then lower heat and add the Chicken Breast Chunks

Simmer untill soft and tender, remove cooked chicken and shred using forks.
Add the Mushrooms and remaining shallots/onions and simmer untill lightly cooked
Cook Rice Noodles - as per packet instructions
